Quick Cinnamon Rolls Recipe

Dear ones, we are approaching the end of Lent, so we have prepared one last sweet recipe for you, some cinnamon rolls, fasting, obviously 😛, so tasty that you will hardly think they are vegan! Bogdi and Cipi were conquered by their fluffy dough and sugar icing… but I more by the cinnamon filling! 😀

And because during this week I enjoyed them several times (I’ve done them 3 times so far !!!), I brought them to you in two variants. The first, with more accessible ingredients, displayed immediately below, and the other version, in which I used coconut flour, coconut oil and brown sugar, will be displayed at the end of the post.

Holy Easter to bring you a lot of peace and joy, dear friends !!! I hug you all with great pleasure !!!

For the dough, sift the flour in a large bowl; add the dry yeast and mix well. Heat the vegetable milk slightly, mix it with the sugar and salt powder (as much as you can with three fingers) and pour it over the flour. Pour the oil and knead the dough for approx. 2-3 minutes (I let the robot knead it). If you have fresh yeast, use it with confidence 🙂 You need 25 g, which you will have to mix with sugar and a little warm milk, in a small bowl. Then sprinkle it with a little flour and leave it to rise. This would be mayonnaise, which you then, after about 8-10 minutes, mix with the rest of the ingredients. In both cases, the dough is left to rise, in a warm place, away from drafts, and covered with a kitchen towel, for an hour or until it doubles in volume.

When ready, spread the dough on a surface greased with a little oil, in a rectangular shape, but not very thin (grease the rolling pin with oil). The dough is then greased with vegan margarine, as evenly as possible, and sprinkled with “filling” of sugar and cinnamon. Roll the dough carefully and cut with thread, as follows: put a piece of thread under the dough and pull on both ends. First in the middle of the roll, then each of the two parts in two, and each piece in half. You can also slice the roll with a knife, but it must be well sharpened! You will get 8 mini rolls 🙂

Next, place the rolls obtained in a baking dish greased with a little oil or margarine (a rectangular porcelain shape of about 30/20 cm), at a distance from each other, and leave to rise, covered, around. for 20 minutes.

Then heat the oven to 180 degrees C (proper heat). Cinnamon rolls are baked for approx. 30 minutes; allow to cool slightly and glaze with the mixture of sugar and lemon juice (although, you can use vegetable milk instead). Be careful not to add too much lemon juice to the glaze, because it will no longer be white and beautiful, as we all want! 😀

Ingredients

It took:
  • 500 g white wheat flour (000)

  • 300 ml vegetable milk (almonds + coconuts)
  • 50 g caster sugar (white)
  • a pinch of salt
  • 60 ml of sunflower oil
filling:
  • 120 g caster sugar (white) or brown
  • 2 teaspoons cinnamon tip (powder)
  • 50 g vegan margarine
Old icing:
  • 100 g vanilla powdered sugar
  • 3 tablespoons lemon juice
For the countertop:
